2 new dishes every mum must try! 

If you’ve got kids, work, have a social life or in my case juggle all 3 you’ll agree with me when I say after a long day the last thing I need is deciding what to cook for dinner. Especially when I try to eat healthy, we’ve got both kids at home and my other half is always starving the minute he gets in! 

So this week I’ve been keeping an eye out for things I want to try and share! I’m a bit late on posting about my first dish but you might have come across it on my instagram before now. 


Here is my hunters chicken with cauliflower rice and green beans. Now I’m one of those who if I have extra veg I cook it up and put it in a pot to eat later-(yes I know it doesn’t float everyone’s boat). I bought the ingredients for this dish completely from Aldi. It took less than 10 mins to prepare and half an hour complete cooking time from fridge to plate. Super easy and now you can almost buy all ingredients ready chopped from the supermarkets so all you have to do is throw it together! Cauliflower rice is my new favourite thing, so easy and replacing rice with this makes it that bit healthier! I’d definitely advise to give it a try and not knock it until you’ve tried it. All you have to do is blitz a cauliflower florette in a blender and add some parsley. You can cook it in the microwave in a bowl for about 6 minutes mixing half way through and leaving to stand for 1 minute. 


My next dish took me all of 10 minutes to prepare and cook! So easy, so tasty and a hit with the family! This is my pesto turkey courgetti spaghetti! 

Ingredients- 

  1. 1 pack of 4  turkey breasts 
  2. 2 courgettes
  3. 1 small packet of egg stir fry noodles (optional) 
  4. 1 small jar of green pesto 
  5. Any veg you have in the fridge that needs using- in my case green beans and a couple of carrots. 

Brown your turkey breasts off and chop them into chucks, once the meat is cooked through add your courgette pealed to make spaghetti and then add your noodles too. This needs to be cooked for about 6-8 mins. boil off your veg and add that to the pan once softened and then mix it all together with the jar of pesto. Cook through for a couple of minutes and dish up. It’s so easy and it really is yum! I sometimes make extra so we can take pots to work the next day too! Give the courgetti a try I’m sure you’ll love it just like we do! 

So here’s 2 dishes that are cutting out 2 main carbs just like that, and in my opinion makes the dishes a lot more colourful and interesting.
