I think I’ve said this before but Connor is the fussiest child you’ll ever come across! He used to eat everything and anything as a baby and then one day he woke up and decided to be a pain in the arse with food from then on. Whenever I see something new I like to give it a go with Connor, anything new that he will try is a great accomplishment.
First up is spaghetti hotdogs!
Super easy to make and cooking time is less than 15 minutes. So I always have a tin of hotdogs in the cupboard incase I’ve not planned dinner for that night and then the kids can have hot dog rolls for dinner, but last night I decided to make spaghetti hotdogs. This I’ve seen a lot on social media and Pinterest and finally I remembered it and decided to give it a try with Connor.
Cut the hotdogs up into 3s then break your dry spaghetti in half and take 5-7 sticks and poke them through. Pile them up in a saucepan and boil it for 10-15 mins. Then serve. Connor isn’t keen on tomato based sauces so he often eats his dinners dry which is bizarre to me but as long as he’s eating that’s all that matters. Really good dish for the kids and super quick!
Next up is my slow cooked creamy chicken and rice.
- 2 large chicken breasts diced and lightly browned off in a pan.
- 1 cup of long grain rice
- 1 tin on condensed cream of mushroom soup.
- 600ml chicken broth.
- 1/2 a bag of frozen broccoli florets
- 4 ounces of reduced fat grated cheese.
I like to cook things that I can throw all the ingredients together in one big pot and leave it, I hate having to follow a recipe to find out what goes in when. So this is perfect, now throw all your measured ingredients in to your slow cooker and set it on low for 4.5 hours. Once it’s cooked chuck in your frozen broccoli florets and cover and cook for another 30 minutes and then dish it up! Perfect slow cooked meal for the cold dark evenings!
