Morning everyone! A couple of days ago I came across a “2 ingredient healthy pancake mix” and thought I must give these a go. So yesterday after the school run and before I put my business head on to work, I made banana pancakes. All you need is a large ripe banana and 2 eggs. It really is that simple!
I cracked 2 eggs in a jug and chopped up a banana, after I whisked with a fork I then spooned into my blender and gave it a wizz up in that. I added an “optional” teaspoon of baking soda to make them a bit fluffier and then added another “optional” spoonful of protein powder. I melted a small teaspoon of coconut oil in a pan and poured 2 small circles of mix and flipped them over once they were cooked enough to hold together. I used the last bit of batter up with a 3rd pancake and served with fresh blueberries, strawberries, fat free natural yogurt and a drizzle of honey.
I’m not lying to you when I say they were amazing and so simple to make, and they kept me full. Being busy its always easier to diet because you don’t have time to pick, and I’m super busy at the moment. Give these a go and I promise you won’t be disappointed.
