I came across a recipe this morning on Pinterest and thought that looks sooooo good I must try it! So off I went to Tesco to pick up some ingredients and I thought I have to share with you guys! It’s also a “good for you” recipe using low fat ingredients making these hash browns perfect for snacking on through the day, and here’s how I made them:-
- 400g / 2 large potatoes, grated
- 300g of broccoli, grated
- 1 egg
- 1/2 tsp of salt
- 120g of very light cheddar cheese
- 1cal spray oil
- Pre-heat oven to gas mark 6
Once your potatoes and broccoli are grated, drain the excess potato juice and mix together in a bowl with your egg. Add the salt and cheese and mix together. Spoon equal amounts into a fairy cake tin (this mix will easily make all 12) and squash down using the back of a spoon, this will help your hash browns to stick together. Lightly spray the oil over the squashed mixture, this will give them a lovely brown finish. Pop them in the oven for 40 minutes.
Once the cooking time is up take them out and leave on the side to cool slightly, enjoy them warm or cold and keep refrigerated once completely cooled. Like I said they are perfect for snacking on but can also be incorporated into dinners with salad or rice or veggies!
